
Ingredients:
1 tablespoon onion, finely chopped
1 tablespoon butter1/2 cup of shrimps
4 pieces clams, blanched - parboil in water or steamed
4 pieces mussles, blanched
4 pieces squid rings
1/4 cup scallops
1/8 teaspoon saffron - used to color and flavor
1/4 seafood stock from mussles and clams - from blanching
3/4 cup cooking cream
1 tablespoon white wine
salt and pepper for added flavor
200 grams of linguini (cooked)
chopped onion chives for garnish
Cooking Procedure:
Saute (to stir fry in a small amount of fat) onions in butter.
Add shrimp, clams, mussles, squid and scallops.
Set aside
Mix the saffron in stock
In a separate pan, simmer cream and extracted saffron for 3 - 4 min to reduce then add white wine. Season with salt and peper and add mixture to sauteed seafood
Pour over cooked pasta, and Garnish with chopped chives.
