I have always loved Cookie Eggnogs whether it's for the holiday seasons or if it's not. Here's how one can make this home favorite even better.
Starting with the Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nuts
- 1 1/4 cups brown sugar (you can use white sugar but that is just not so healthy)
- 3/4 cup salted butter (has to be soft but not liquefied)
- 1/2 cup eggnog
- 1 teaspoon vanilla extract
- 2 large eggs or just the egg whites
For toppings:
whip cream or your favorite MnM's or sugar sprinkles
Utensils:
Whisk
Big bowl
Small/Medium bowls
Cookie sheets
Mixer
Procedure:
Preheat oven to 300 degrees F.
In a medium bowl, whisk together flour, baking powder, 1/2 teaspoon ground cinnamon, and 1/2 teaspoon ground nuts; put it aside.
In a large bowl, cream sugar and butter together to form a paste.
Add eggnog, vanilla extract, and eggs. Beat at medium speed until smooth.
Gradually add the flour mixture and beat at low speed until just combined.
Drop by rounded teaspoons onto cookie sheets, an inch apart. Sprinkle each cookie lightly with whip cream and your favorite toppings.
Bake 23 minutes or lightly browned. Transfer cookies to the refrigerator after cooling.
This can make around 2 - 3 dozen delights.
Enjoy ;)
